A NEW START…

In May I had a terrible accident, I fell and injured my whole right side of my body.

I was just outside mowing my 5 acres, and the next thing I know I flew off the front porch and was laying in the front yard and could not move.

Sprained shoulder, Bruised hip bone, Sprained knee, Sprained Foot and ankle. I also busted my nose.

After my fun ride to the Emergency room, I came home in excoriating pain. I was unable to even get up and go to the bathroom, needless  to say I cried a lot. This was not me, this is not who I was. After about 2 weeks of bed rest I was able to move a little.

Day by Day I improved, its been almost 4 months now and I’m finally able to drive again, braking with my left foot. Doctor said it will still be  4 more months for a full recovery, even then I may still have to have some sort of knee support or a bit.

I apologize to the folks that were following me, Its been hard not to be able to cook and try new recipes. Hug Hugs too you guys.

YES, if your wondering if I gained weight the answer is YES. My family did the best they could, but the easy access food was the best. I’m getting back on track thank goodness, my sugar levels have been high and I’m extremely tired all the time. I think this has led to a lot of the depression I’ve been going through. But Its getting better. 🙂

I still get a lot of swelling in my foot and leg if I do too much, and I will be wearing a knee brace for a while  …BUT, IM BACK!

Low Carb Philly Cheesy Steak Wrap

I’ve never cared for Philly Cheese Steak, and now I no why, It was the Bread. I took away the fat hoagie and I’m in love! This light but hearty replica is AWESOME!

Trying some simple easy recipes to help my Son on his quest for a flat Abs! Hes an active full time College student and this is going to be a huge hit with him.

INGREDIENTS

1 Package (6 oz) Beef Steak fully Cooked (or your on leftover steak)

Romaine Large leaves (I used Butter lettuce,its what i had, its good too 🙂 )

Provolone cheese

1 Green Bell Pepper Sliced

1 Large Onion (I use Sweet onions)

1 Cup Portabella Mushrooms (sliced)

2 Tablespoons Extra Virgin Olive Oil

1 Tablespoon of Butter

Salt and Pepper

There we go!

Ok Guys, Grab a large pan or your Griddle and lets get cooking!

LETS COOK

Lets Prep! Grab your Bell Pepper, Onion and Mushrooms wash and slice. Don’t wash Mushroom just wipe with a dry towel.

In a Large pan or Griddle (Im going to show both) turn burner to Med  and add Oil and Butter. And toss in your sliced Veggie’s. NOT YOUR MUSHROOMS JUST YET!

Saute Veggie’s until tender and slightly brown, add Salt and Pepper, if they start to Cook too fast turn burner down and continue to saute.

Add your Mushrooms and Saute just a little more 🙂

Add your MEAT, Yeah look how simple!

Saute just a tiny bit more to heat the meat.

Ok Guys, now you can put your mixture into a plate and finish this next step in the same pan, but I love pulling out the Griddle.

Separate into large spoonfuls and turn Griddle on low, we are just going to melt the Cheese. Actually, you can melt the cheese anyway you guys want too, that’s really all we are doing at this step, but PLEASE DO NOT melt in Microwave it toughens up the juicy tender Steak.

Get your Lettuce wrap ready while cheese is melting.

Using a large Spatula gently lift and place on Lettuce.

Roll and ENJOY! 

This Recipe makes about 6 to 8 Wraps depending on the size of your wrap. It stores really well and you can tote to work or school.

McCindy’s LCHF Breakfast Burrito

A year ago one of my favorite Breakfast to grab was a McDonald’s Burrito, I got really hung up on them for a long time. Every time I was out and about during Breakfast hours, a cup of coffee and a Burrito was the choice of this SuperMom before I headed home.

Today, I am a Proud Low Carb Chic. so coming up with a great idea for Breakfast makes me do a Happy Dance!

Come Dance with me guys and let me show you a very easy LCHF McCindy’s Breakfast Burrito 🙂

 

Ingredients 

1 Egg

3 Slices of Bacon (or Sausage).

Cheese your choice I used Sharp Cheddar 

Salt and Pepper

 

Step 1 

Cook your Bacon or sausage and set aside.

Next heat small pan with a tablespoon of Bacon grease or Oil on med. high heat. Beat Egg.

Pour HALF of egg in bottom of pan, it will be THIN, when done on one side flip for just a second on the other.

Set aside on plate and Top with Bacon and Cheese.

Cook the Remainder Egg the same as the first. Then sit on Top of cheese and top that with Warm Salsa.

Now the Roll! Start at one end and gently roll, it will hold together just be alittle gentle 🙂

It holds together really well, top with more Cheese or Salsa if you like, ENJOY!

Low Carb Grilled Bacon Cheese Sandwich

OH YES! This is a Wonderful quick, easy recipe and so tasty. With this Simple Bread, Bun recipe you can use for the Grilled Cheese or Hamburger or Even a Toasted Reuben YUMMM!

What you’ll Need

2 Eggs

2 Tablespoons of Water

2 Tablespoons Coconut Flour

1/2 Teaspoon Baking Powder

Microwave safe dish, (I used a plastic rubber made sandwich container, worked really well!)

For your Grilled Sandwich

1  1/2 Tablespoons Butter (I used Unsalted, But you don’t have too)

Cheese, Bacon or anything you want to Grill.

Here’s What We Do

In a small mixing bowl add Eggs and Water then Whisk well.

When you mix the Eggs add other ingredients  (Coconut powder and Baking Powder).

When Ingredients are mixed well with Whisk pour into your Microwave container.

Place into Microwave for approximately 2 minutes.

Next place cooling paper or board down and flip container upside down and flip hot bread onto paper or board to COOL.

(should come out really easy).

LET COOL until you can place hand ontop ! Then Slice in half.

Next ADD Butter to pan on Med high and melt slightly DO NOT BURN BUTTER before adding Bread.

Add Bread, Cheese and Bacon.

Low Carb LCHF Cream Cheese Pound Cake

I am Re-Blogging this Wonderful Recipe from FITTOSERVEGROUP this is the BEST Cake I have found. Please enjoy and Serve with Low Carb Topping just like a Pound Cake. ENJOY I know I did!!

Sometimes you just want something buttery rich and I was wanting a pound cake. Back when I used to bake with regular flours I made a mean cream cheese pound cake. I remember distinctly the day my brother- in- law, Paul almost ate that entire cake. Well, I wanted to create that same rich flavor but low carb of course. I wanted my cake and to be able to eat it too!

I am very pleased with the results of this recipe. Enjoy and skip the carbs!

1 ¼ c almond flour

¾ c of swerve or other sugar substitute

1 tsp baking powder

¼ tsp of salt

4 eggs

3 ½ oz cream cheese

4 tbs softened butter

1 tsp of vanilla

Low Carb Chicken Marsala with Zucchini Noodles

One of the comfort foods I love to get when I’m at Olive Garden is Chicken Marsala. I decided to find a Low Carb way to enjoy one of my Favorites MY WAY low carb. This is a Simple Easy way to lean to re-love Chicken Marsala without all the Carbs the restaurants love to put in our food. If you love Chicken Marsala like I do, you’ll see this Easy fix is well worth a try.

In this recipe I did use a short cut sauce and I’ll explain why later, so we are not going to be making our Marsala sauce from scratch, well not exactly 🙂

What your going to need

Chicken Breast slightly pounded

1/2 Cup Crisco

1 Zucchini 

2 Cups sliced Mushrooms ( I used Portabella)

2 Tablespoons of Butter for mushrooms

1 Tablespoon Olive Oil

1 Tablespoon of Butter for Zoodles

1/2 Tablespoon Garlic Powder (fresh Garlic 2 Cloves crushed well).

Salt and Pepper

 

LETS COOK!

First lets go ahead and get our chicken ready cover with plastic wrap and pound lightly. Then place your large pan on a Medium high burner and add Crisco and heat.

Salt and Pepper Chicken and Add to HEATED oil.

Brown both sides. Turn over chicken pieces, and Brown slightly on both sides about 4 minutes each side. Then Remove from the pan set aside for a min.

Add Butter to Pan and use to deglaze your Pan.

Once Butter is melted and still on Med. High Add your Sliced Mushrooms.Incorporate and stir into Butter.

OK…here is my shortcut, now I preach about Man Made foods and making everything from scratch all the time, but, every now and then we find a decent substitute. Living were I do getting to a Liquor store is 45 min. away. So I found a Low Carb alternative thats not to bad at all.

I found this product at Walmart, its inexpensive and the taste is almost spot on. But do add the extra mushrooms as shown above.

Okee Dokee, that said lets move on.

Next after mushrooms are slightly Saute, lets add our Short Cut Sauce. Then add Chicken.

Lets get our Noodles ready while that is Simmering. 

I have a cool little device I got at the store, I think its called a Vagetti or Zoodle. If you don’t have one of these GET ONE, but in the meantime you can slice your Zucchini very then.

In a Small Sauce Pan add 1 Tablespoon of Butter and 1 tablespoon of olive Oil, Garlic,Salt & Pepper.

20150713_195912   Stir and Heat until Zoodles are Heated and flavors are totally incorporated.

Thats it!
