Amish Breakfast Casserole Goes Low Carb

The climate our kids live in has changed. Life seems more about children than about family and as a result the coming and going of family from home to home has ended. For us anyway. We got so sick of hearing our siblings say they have to ask their kids about an event or holiday that we stopped asking. If you think that is harsh, you should hear what we actually said to our own children!

From the days when aunts, uncles, cousins, grandparents and even family friends came and went, staying for days at a time, we all have great recipes for getting a nice meal set out without a lot of prep time away from guests. This is actually one of those, but done over in low carb. It is completely fine to prep this the night before and refrigerate until you put it in the oven. Another great thing about this casserole, the meat is completely optional. It does not change the quality of the dish. For my example, I only put on 6 strips of crumbled bacon on top. I have made the original with no meat, with soy meat, ham, bacon, sausage, turkey. As an added bonus, it reheats beautifully.

Serves 8 large portions as a main or 16 side portions as an accompaniment.

Ingredients
1 pound Bacon or Sausage, cooked and crumbled (Optional)
1 cup diced onion
6 eggs, beaten
2 cups Zucchini, grated
2 cups Sweet Potato (this is just one whole potato), peeled and diced
8 ounces Cheddar, shredded
16 ounces small curd cottage cheese

Place potato pieces in a small pot of boiling water. Boil for 10 minutes. Drain and quickly rinse with cold water. Place all ingredients in a bowl and mix well. Evenly spread mixture in a lightly greased pan(s), either two 8×8 or one 9×13. Bake at 350°F/176°C for 40 minutes. Serve.

McCindy’s LCHF Breakfast Burrito

A year ago one of my favorite Breakfast to grab was a McDonald’s Burrito, I got really hung up on them for a long time. Every time I was out and about during Breakfast hours, a cup of coffee and a Burrito was the choice of this SuperMom before I headed home.

Today, I am a Proud Low Carb Chic. so coming up with a great idea for Breakfast makes me do a Happy Dance!

Ingredients 

1 Egg

3 Slices of Bacon (or Sausage).

Cheese your choice I used Sharp Cheddar 

Salt and Pepper

 

Step 1 

Cook your Bacon or sausage and set aside.

Next heat small pan with a tablespoon of Bacon grease or Oil on med. high heat. Beat Egg.

Pour HALF of egg in bottom of pan, it will be THIN, when done on one side flip for just a second on the other.

Set aside on plate and Top with Bacon and Cheese.

Cook the Remainder Egg the same as the first. Then sit on Top of cheese and top that with Warm Salsa.

Now the Roll! Start at one end and gently roll, it will hold together just be alittle gentle 🙂

It holds together really well, top with more Cheese or Salsa if you like, ENJOY!

Low Carb Grilled Bacon Cheese Sandwich

OH YES! This is a Wonderful quick, easy recipe and so tasty. With this Simple Bread, Bun recipe you can use for the Grilled Cheese or Hamburger or Even a Toasted Reuben YUMMM!

What you’ll Need

2 Eggs

2 Tablespoons of Water

2 Tablespoons Coconut Flour

1/2 Teaspoon Baking Powder

Microwave safe dish, (I used a plastic rubber made sandwich container, worked really well!)

For your Grilled Sandwich

1  1/2 Tablespoons Butter (I used Unsalted, But you don’t have too)

Cheese, Bacon or anything you want to Grill.

Here’s What We Do

In a small mixing bowl add Eggs and Water then Whisk well.

When you mix the Eggs add other ingredients  (Coconut powder and Baking Powder).

When Ingredients are mixed well with Whisk pour into your Microwave container.

Place into Microwave for approximately 2 minutes.

Next place cooling paper or board down and flip container upside down and flip hot bread onto paper or board to COOL.

(should come out really easy).

LET COOL until you can place hand ontop ! Then Slice in half.

Next ADD Butter to pan on Med high and melt slightly DO NOT BURN BUTTER before adding Bread.

Add Bread, Cheese and Bacon.

Fried Egg with Cheesy Crisp

Breakfast with a CRUNCH! One of the quickest easiest Breakfast it just takes a few minutes, Promise 🙂

 

Ingredients

Egg

2 Strips of Bacon

Cheddar Cheese, just a sprinkle 

Sliver of Butter to cook Egg or you can use Olive Oil

Here We Go!

Bacon we need to cook our Bacon, I do mine in Microwave, Yep. You can cook yours however you like, if you want to try Microwave here’s what you do.Get a Microwave safe plate spred Bacon on plate, cook on High for 3 to 4 min for 2 to 3 pieces. Take off plate and let rest and drain grease on Paper towel.

Lets turn our burner to medium high and place our small pan. Then Sprinkle your cheddar cheese.(don’t oil pan, cheese will do that.)

Place a piece of Parchment Paper down flat on counter. When Cheese gets Crispy slide onto Parchment Paper to cool.

Next place Sliver of Butter in Pan, leave burner on medium high and Fry your Egg.

DO NOT Salt Egg, you can add Pepper but with the Salt flavor in Cheese and Bacon, lets don’t. Depending on how you like your Egg cook to preference, shown in photo is basted with butter to form a top.
