Hello There!

Hello. I’m not Cindy. I’m Jennifer.

We do have a couple strong mutual interests. First, we married very difficult, rambunctious, charming, men who happen to be brothers. Clearly these men were put on earth specifically to cause us grief under the guise of laughter and mirth. Or vice versa. I’m not totally sure. Second, we both LOVE food. Other than this, we are pretty different.

Our cooking and eating styles are completely different. I cook for 2-6 in the same week and host holidays that may exceed 20 guests. I play with food a lot. I like trying out new recipes and techniques, but only with simple ingredients. You most likely won’t ever see higher end items in my recipes. You will see a lot of budget friendly items. We are a restless, large bunch and so are our meals. The inspiration could come from anywhere in the world, some show we watched, or just experimenting.

While I am always working on my weight and health, I don’t make any significant progress. Willpower is just not my thing. If I work really hard I want to be able to drop a size or a daily medication. So far, I’ve lost close to 20 pounds and am still a size 16 and they have added pills instead of taking them away.

Why low carb then? Because low fat/low sodium didn’t work at all. I gave up egg yolks and salt and sauces and loads of red meat. My cholesterol went UP. TWICE. Low carb makes nice, family friendly meals, picnics, it is interesting and has taken a full inch off my waist and some of the fat out of my face. I would probably do a lot better if I would stick to it, but I adore bread and ice cream, and sitting on my fat, lazy butt binge watching a show stuffing my face with popcorn.

For that reason, I will just be posting recipes without a lot of preamble but feel free to grill me with questions and suggestions.

Fried Green Tomatoes with Spicy Sauce- Low Carb

I love Fried Green Tomatoes, not just because I live in the South, but they are just simply Good. Some of you may consider this a Summer Dish, it is really, But its also a wonderful appetizer for a warm bowl of Vegi Soup.

There are tons of recipes online for these wonderful tasty little green things, here is my take on the Low Carb version of Fried Green Tomatoes.

You will want to use a Cast Iron Pan or a Heavy Skillet.

 

Here’s What You Will Need.

Ingredient’s:

2 Medium to Large green tomatoes

1/2 Cup Almond Flour or Almond Meal

2 Eggs

2 Tablespoon Parmesan Cheese  

1/2 Tablespoon Black Pepper

1/2 Tablespoon Salt

1/2 Tablespoon Cayenne Pepper

I/3 cup to 1/2 cup Olive Oil or Peanut Oil (all pan bottoms are different adjust oil to cover just the bottom).

NOTE: If you want to fry more Tomatoes for a larger crowd adjust recipe as needed.

Low Carb Creole Dipping Sauce:

1 large Egg Yolk

2 tsps Fresh Lemon Juice (or in the little cute little lemon)

1 tsp Dijon Mustard

1/2 tsp Salt

1/8 tsp Black Pepper

1/2 cup Extra Virgin Olive Oil

2 tablespoons Sriracha (more if you like heat less if you want milder)

Ok lets Cook!!

We are going to make our Sauce first, so we can have it handy when our Tomatoes are Hot and Freshly Cooked.

Next:

Combine egg, lemon juice, mustard, Sriracha, salt and pepper in Small mixing bowl and combine with whisk. Pour in the oil in a thin, steady stream and Whisk as you go constantly. Mixture should start to become thick .

DONE! You can use this Sauce for a lot of dishes including Shrimp and Hamburgers. I don’t like Mayo. But this is Good!  

OK, lets get our Tomatoes ready, Wash and dry your Green Tomatoes. Now slice as thin or thick as you like, the Norm is 1/2 inch, I like mine a tad smaller. Lay your Slices on Paper Towel and Salt and Pepper both sides. let them fellows sit there for about 5 to 10 min. to drain most of the moister out.

Next get your Eggs whipped up in one bowl and your Almond Meal/Flour in the other. Add all the seasoning to the Flour mixture and mix with a fork.

Get your Frying pan ready add your oil and heat Med. high . While that is heating up lets get started with our Tomatoes.

Dip Tomatoes  in flour first, then Egg wash, then back in flour. Add to hot pan, Don’t crowd your pan, take your time and only do a few at a time 3 – 5 min that’s all, watch don’t let them burn!

You may loose some crust No worry’s, they will still be terrific!

When you take the out of pan put on a cooling rack and serve as soon as possible!

Serve Sauce on the side or Pour over Hot Tomatoes.

A NEW START…

In May I had a terrible accident, I fell and injured my whole right side of my body.

I was just outside mowing my 5 acres, and the next thing I know I flew off the front porch and was laying in the front yard and could not move.

Sprained shoulder, Bruised hip bone, Sprained knee, Sprained Foot and ankle. I also busted my nose.

After my fun ride to the Emergency room, I came home in excoriating pain. I was unable to even get up and go to the bathroom, needless  to say I cried a lot. This was not me, this is not who I was. After about 2 weeks of bed rest I was able to move a little.

Day by Day I improved, its been almost 4 months now and I’m finally able to drive again, braking with my left foot. Doctor said it will still be  4 more months for a full recovery, even then I may still have to have some sort of knee support or a bit.

I apologize to the folks that were following me, Its been hard not to be able to cook and try new recipes. Hug Hugs too you guys.

YES, if your wondering if I gained weight the answer is YES. My family did the best they could, but the easy access food was the best. I’m getting back on track thank goodness, my sugar levels have been high and I’m extremely tired all the time. I think this has led to a lot of the depression I’ve been going through. But Its getting better. 🙂

I still get a lot of swelling in my foot and leg if I do too much, and I will be wearing a knee brace for a while  …BUT, IM BACK!

Low Carb Green Smoothie

This to me is one of the best Green Smoothies I have tried, Its refreshing and really helps energize the body with a boost of Freshness.

As always I love to keep my ingredients Simple, and this one my friends is easy and quick. You can prepare the ingredients in a baggy so you don’t have to do them everyday, that i find is the easiest.

One of the main reason I like the Green Smoothie It REALLY REALLY helps for a quick refresh when your doing Low Carb. If I find myself in the “STALL”, I re boot. I don’t like doing the Total Cleansing routine, I just swap out a Meal or Two with a Green Smoothie and eat regular Low Carb Snacks and a God Healthy dinner. Then in 3 to 7 days on this routine, Im back in action again. Actually I have to Confess, I really like the Green Smoothie even if Im not in a Stall.

This recipe is for a Single Serving, if you need to do larger just Double 🙂

LETS GET STARTED!!

 

What you will need:

Small blender or whatever you have.

 

Your Ingredients 

1 Fresh Stalk of Celery Leaves on

1 Cup diced Zucchini or Cucumber (Peel on, Nutrients in those skins ).

1 Cup baby Spinach 

1 to 2 Tablespoons lemon juice (your preference I use 2 TBLS)

2 Tablespoons Protein Powder

4 ice cubes

1 Cup Water

NOTE: If your not a big fan of Celery omit and add 1/2 cup Kiwi or Avocado. 

 

Lets Blend!

First lets get our Smoothie Ingredients ready.

   1.Celery, Dice and LEAVE the Leaves, tons of good stuff in those Leaves.

      2. Zucchini or Cucumber. (Skins ON).

   3. Spinach (you don’t have to chop)

   4. Lemon Juice (Fresh is best, I was out).

   6. Water and Ice put directly into Blender or save for last .

I’m using a small personal blender I got at Walmart for 12 dollars, so don’t worry about those fancy ones for this 🙂

Lets pack it into our Blender and get ready to Enjoy!

Blend for around 50 Seconds, or until well blended. Grab a Pretty cup and Garnish with a Celery stalk, Pretty!

The Stall!

It Happens, Don’t stress about the ,”Stall.” Do yourself a favor stay off of the scale and quit torturing yourself. We all have Stalls and think its all over, no more weight loss, another diet FAIL!!! 

Low Carber’s often loose inches compared to pounds. Don’t obsess over those numbers in front of you, Grab a pair of tight jeans that is one size too small and use those, trust me quit beating yourself up. Especially us Ladies during that time of the month, our weight will fluctuate and yuk!

How do I know I’m at a Stalling point , well if your staying on track with your Low Carb lifestyle and your NOT Cheating yourself. 

If you haven’t lost weight or inches for more than 4 to 6 weeks,then you very well may have entered the dreaded “Stall.”

If you ARE at a Stall then lets try a few things to get you back on track:

  1. Try raising carbs. Sometimes eating too few carbs can cause metabolic slowdowns, upping fat or increasing fiber. I take a teaspoon of Coconut oil each day, and make sure I take a Fiber supplement. YES, I too have Stalled, I was initiated into that special club 2 months ago. I’m just now starting to loose again. 

  2. If your still eating the same thing, change it up. Add more good FATS, maybe little less Protein. Watch those vegis! Corn, beans and potatoes even in small amounts can really throw you off. I want you to eat Vegis, just the Good Carbs. Go back to the Original Plan you started on and CHANGE one thing,something.

  3. LOOSE the Fruit, if you are eating Fruit stop for 1 week or 2.

  4. I love my Beer too, but reality check! Find a substitute like really Dry Wine, and limit your glass to 1 or 2.

  5. Sweeteners, I know touchy subject, but lets face it, even the slightest taste of sweetness can cause an insulin spike.

  6. All Nuts are created equal..NO..if your snacking on Nuts stay away from Peanuts and Cashews. Watch your portion size on the others, I’ve found alot of folks will put a can on the desk or counter and snack all day, NO you have portions on Low Carb no matter what you’ve heard 1/4 Cup a day!

  7. Remember EAT, I know it sounds crazy, but when you skip meals and you let your belly get hungry, its like starting all over, you’ve got to keep you metabolism going. Don’t let your body think its starving.

  8. Know your body, get your measuring tape out and measure. Now lets get started and get you guys off the STALL!

I hope this helps some of you, we are all different, not all one thing works for All! When you get to that Happy Weight. Then we will work on keeping it Off and keeping you guys Healthy!

I recently went to the Doctor and He took me off 2 of my Blood pressure meds. I’m down to 1 now and no Diabetic signs or symptoms. How long have I been on Low Carb/High Fat? Since late May. With all good things it takes time, be patient,be true to yourself and stay motivated. Hugs to All 🙂

Low Carb Crock Pot Cube Steak and Gravy

This is wonderful easy easy easy Low Carb Family Dinner, I love Cube Steak if its cooked right, and let me tell you guys, this is melt in your mouth delicious!

Normally With original Southern Cube Steak and Gravy you pound flour into steak and fry in vegi oil. and make the Gravy with more Flour ect.

So to make this wonderful Low Carb version we are going to do this just alttile different. There are Carbs in this dish, the gravy, so you guys remember that. This dish is not Totally Carb free, but the Sugar is Zero.

What you will need

Crock Pot

4 pack cube steak

2 Packages Brown Gravy

1 Onion

2 Cups Cubed Mushrooms ( I used portobella)

3 Cups Water

1  to 2 Tablespoons Butter for Browning

Salt and Pepper

Lets Cook!

Set up your crock pot and turn on to a 6 hr high heat. or 10 hr low.

Chop Onion and Mushrooms and set aside.

Put your butter in sauce pan on med. high and get ready to brown your cubed steak. ( I actually pounded my steak alittle more) salt and pepper both sides and place in pan to brown.Remember your NOT fully cooking just shear on both sides,

When Steaks Brown on both sides (we dont want to fully cook, just brown) place in the bottom of Crock Pot. Add juices from Browning Pan in Crock Pot also.

Add mushrooms and Onion to Crock Pot.

Mix both packs of Gravy mix to your 3 Cups of Water. Mix well!

Pour Gravy Mix into Crock Pot over other ingredients, no need to stir!

Put lid on tight and cook. It will take 6 hours on high or 10 on Low.

When your Steak in complete serve over French Style Green Beans,yumm!!!
